I was tired of the roast pork tenderloin, so I stopped at the store on the way home for a bag of riced cauliflower medley. I scrambled some eggs, diced the pork, and turned it into fried cauli-rice. Flavoured it with tamari, chili-garlic sauce and Sweetzfree.

Meatloaf made with lots of veggies. I finely chopped mushrooms, peppers, onion, spinach, zucchini and one clove of garlic until it was a ground meat consistency. I mixed approximately one part of this mixture with two parts of 80/20 ground beef and one large egg then added seasonings to taste.

I like making meatloaf, meatballs and patties out of a variety of animal proteins and vegetables. Beef, pork, chicken, turkey, salmon and shrimp all work well.

Ground lamb with riced cauliflower and Mediterranean spices rolled in steamed cabbage or grape leaves is another favorite twist.

Cheese fondue!!! Bread was the staple dipper, but I replaced it with blueberries. Blueberries go surprisingly well with fondue.

I love berry and cheese skewers, but never considered a fondue. How did you make it? Sounds fun.
