The weather has taken a turn for the worst, so comfort food cravings have kicked in big time...

...cheese crunchies (like the ones in produce section that are 100% just cheddar cooked into crouton form)...

Oh my. I copied both of these recipes! They sound great and easy.

Last night I was tired out (worked all day) - so I just made these hors D'oeuvres thingies on the pkg label for Alouette Garlic and Herb cheese spread - they weren't half bad... the jury was out on the nutmeg sprinkled on them though... Odd combo - take one of those cheese crisps like Robin describes above (those are a staple in my salads), put on some Alouette cheese spread, place a small piece of prosciutto on it, add 4/5 toasted pine nuts, and a dollop of pesto, sprinkle with nutmeg and eat! A lot of flavors going on there... they were pretty good but not sure I'd make them again...

Tonight will be the Country Fried Chicken Salad again with Green Goddess Dressing.

So I tried clams and oyster mushrooms last night. Both turned out to have a lot more carbs than I would have thought. Who knew?

I reheated some pork tenderloin in the microwave with butter, and made some mashed buttercup squash with cream cheese on the side. DH said, "I ate all my baby food."

This made enough for 3 people, or 2 super hungry ones
It made one very large bowl for both of us, plus maybe half a cup for seconds.

Thanks for this great idea! I used cubed chicken breast, a packet of taco seasoning, a bag of frozen broccoli florets, a jar of salsa, and some chicken broth and did the whole thing in the crockpot last night. I dumped some shredded cheese and sour cream in at the end. When my daughter got home from work she said "Soup? I can't believe it! I have a cold and have been thinking about soup all the way home." (I never make soup!) It was really delicious.

Last night was big salad (surprise surprise) romaine, sauteed shrimp, bacon, hard cooked egg, cheese crisps, Italian blend cheese, tomato w/Ranch, and my Halloween "candy" a pkg of Atkins almond M&Ms.

Tonight will be a more properly prepared Country Fried Chicken Salad w/Green Goddess Dressing
