Default Thai Chicken

Thought I'd share last night's dinner with you guys and gals. it was amazingly easy and amazingly good!

I'm just getting to know Thai fish sauce and what it brings to a dish. Probably old hat to some of you, but a very new additive for me.
I'm really enjoying experimenting with it. An interesting flavor, that. This tasty dish was almost effortless to prepare. Goes together in minutes! My kinda food! We both thoroughly enjoyed this and hope you will, too. I served my portion atop some leftover steamed cauliflower, which was quite good. My husband had his atop some leftover basmati rice. This would also be good atop steamed spaghetti squash, zucchini pasta or eaten alone with side vegetables of your choice. This dish is suitable for all Atkins phases and for your Paleo-Primal guests as well. I use coconut aminos nowadays for its healthier and low sodium qualities, but you can certainly substitute tamari or low-sodium soy sauce if you prefer.

INGREDIENTS:

2 chicken breasts (10 oz., skinless, boneless, cut into small bites)
1 T. coconut oil
2 T. olive oil
4 oz. onion, chopped or sliced (yellow, white or red)
1 large jalapeno, stemmed, seeded and chopped
1 clove minced garlic
½ tsp. minced ginger root
1 tsp. Thai fish sauce
1 tsp. coconut aminos
¼ tsp. chile paste (I use Sambal Oelek)
½ c. fresh cilantro, coarsely chopped
½ c. homemade chicken broth
Pinch of your preferred thickener (optional)
¼ c. green onion, chopped (optional)

DIRECTIONS: Heat oils in a non-stick skillet or wok and add onion and jalapeno. Saute until it begins to wilt/caramelize. Add garlic, ginger, fish sauce, coconut aminos and chili paste. Continue to stir fry a couple minutes. Add cilantro and broth. Allow flavors to meld a couple more minutes and thicken if desired. Serve at once.

NUTRITIONAL INFO: Makes 3 servings, each contains:

338 calories
21.43 g fat
5.17 g carbs, .97 g fiber, 4.2 g NET CARBS
29.7 g protein
495 mg sodium
388 mg potassium
46% RDA Vitamin B6, 39% C, 13% E, 12% copper, 18% iron, 92% niacin, 45% selenium, 10% thiamin, 14% zinc

Thanks for sharing this. I love thai food and have been thinking for ages that I should buy a good fish sauce from a proper Asian supermarket, where you tend to get better quality things. Now you've given me an incentive.
Speaking of Asian foods, I don't know if you've tried black rice vinegar, but it is extremely good. This is the one I buy:

No, I haven't seen or tried the BLACK rice vinegar before. But I do love rice vinegar, so I'll keep my eyes peeled when I next drive over to the neighboring city's Korean market and see if they carry it. I'm always game to try out new seasonings. Thanks for the tip Kirsteen!

That looks delicious! Are you starting with pre-cooked chicken? And what is the red that looks like red pepper?

It is possibly worth holding out until you can find the brand in the picture I posted - Chinkiang Vinegar. That's the one I have, and to judge by what I have read online, it would seem that it's regarded as the best.

Hopefully the Korean grocery will have this particular brand. It's a very large grocery with many choices in each department. Fingers crossed. I wrote down the brand so I can take it with me when I go next.

Liz the red is 1-2 T. red bell pepper I threw in for a better photo. I've noted that on the website recipe now.

No the chicken wasn't pre-cooked. I added it to the saute pan after the onions and jalapeno were sauteed. I've noted that in the recipe directions more clearly now. I think my URI meds are drugging me more than I realized (she says embarrased). Thanks for pointing out that phrase omission in my directions.

I'm brand new here and found this recipe and made it immediately. I'm in Germany so I don't have coconut aminos whatever those are, nor any keto thickeners, so I just boiled the broth a bit to evaporate it. Mine's not as pretty as yours, but it sure is good. Oh, and since I didn't have my foundation veggies yet today, I carefully added green beans. It's wonderful, a little too spicy for my husband, but he can eat whatever he wants so this is all mine: )

The only Thai food I really used to miss is Tom Ka Gai (creamy chicken soup). I'm interested in the flavor, not in being a purist about the whole thing.

I always have a can or two of coconut creme in the house. I have a tube of cilantro and use fresh lemon juice instead of lemon grass (I like mine on the tart side). I have thai clili pastes in various jars and my own chicken broth.
There's always cooked chicken in my fridge.

Toss it all together to taste, easy on the fresh chilis. Yum.

So glad you liked it! Yes, one has to adjust the "heat" of the spice for individual taste. I used to like nothing hot; like stuff a bit "warmer" as I get older.

Yes, I actually think Thai soups are my favorite part of their cuisine. The stir-fries aren't that different from many a Chinese dish. But the soups, with the peanuts, coconut, and cilantro in everything (which we love)......welll there just aren't words to describe how good those soups are.

LOL. I used to say, "If music is too loud, I can't hear it, and if food is too hot, I can't taste it." Thing is, about two years ago I discovered how much I love the taste of chipotle peppers. The heat is waaaay too much for me, but I buy the paste in cans and use it sparingly in many things. Mayo blunts the heat, while leaving the flavor I love. Tabasco brand now has a chipotle, too. I've read somewhere there is an industrial product which offers the flavor without the heat. Have you ever tried that?

No, I haven't seen that product. I have the Tobaso, the canned in adobo sauce and also the powder form. I feel I'm learning to control the amount pretty well.
