Tonight I had left overs and decided to try something new.My kids love smokies.................all beef...........no carbs.
I took the smokies and cut them up in small chunks to fry them.I have broccoli and collyflower left over so I cut small chunks and fried them too.When everything was cooked i topped it all off with shreaded cheese and made it into a big cheese pancake.
It was delish and only done with leftovers.Nice snack.

Pity the OP doesn't seem to be around anymore - I just noticed this is an old thread. But the cocktail sausages I've found on-line do have carbs - anywhere from 2-4 carbs/5 links, depending on the brand.
If anyone finds some all beef smokies that have no carbs - or fewer than 2 - please share the info!
I usually make my own sausages, though some of the german-style ones are quite low in carbs and made with only meat and spices
I found a sealed sausage making kit in my local charity shop but you can buy the casings and "stuffer" gadget online - even special funnel type tools to stuff the casings by hand http://www.sausagemaking.org/acatal...ge_Fillers.html
Hillshire Farms makes a brand I've had before and they are tasty. They are small sausages that are made with pork, beef and turkey and come fully cooked but the disclaimer says always heat them thoroughly before serving. Here are the nutrition facts for this brand:
