Default Bacon Mushroom Chicken

Bacon Mushroom Chicken

Cook Time: 1 Hour Ready In: 1 Hour 15 Minutes
Yields: 2 servings

INGREDIENTS:
2 tablespoons butter, melted
2 bone-in chicken breast
halves, with skin
1 teaspoon seasoning salt
1 clove garlic, crushed
2 thick slices bacon
1/2 cup mushrooms, halved
1/4 cup heavy cream

DIRECTIONS:
1. Preheat oven to 350 degrees F
2. Pour melted butter into a 9x13 inch baking dish. Add chicken, skin side down; sprinkle with seasoning salt and garlic. Turn chicken over, season, and lay bacon strips on top. Sprinkle with mushrooms.
3. Bake in preheated oven for 45 minutes to 60 minutes, or until chicken is no longer pink and juices run clear.
4. Remove chicken, bacon and mushrooms to a platter and keep warm. Pour juices from baking dish into a small saucepan and whisk together with cream over low heat until thickened. Pour sauce over chicken and serve warm.

That does sound yummy. Sounds like something my husband will eat also.......minus the mushrooms.

I actually used boneless, skinless chicken breasts, and it was great. My husband loves this recipe!

DH made this for us tonight. He used 3 or 4 boneless skinless chicken breasts, and he added a couple pinches of Not/Starch to the sauce to help thicken it.

It was good! We all liked it. DD wasn't fond of the bacon as it is typical of bacon made 'with a meal--soft, she likes it well done and crunchy. But she loved the chicken and sauce, as did we.

In the future, DH and I decided next time we make this recipe, we will add more mushrooms, definitely black pepper, and half-cook the bacon first and then put it on top. (Potentially we might cut the thicken into pieces as well, but it was good with the breasts whole.)
