Default Blueberry Muffins

Hello everybody! I modified this recipe from one of my favorites...

1 cup blueberries (Iused frozen, but fresh would be great!)
1 3/4 cup oat flour
1/2 cup splenda (and some for dusting blueberries)
3/4 tsp salt
1 egg, beaten
1/3 cup canola oil
3/4 cup buttermilk

Clean blueberries and dust with some splenda. Set aside. Combine dry ingredients. I another bowl, stir together egg, oil and buttermilk. Add to dry ingredients. Fold in blueberries. Dough will be a little stiff. Use an ice cream scoop to fill regular muffin tins about 3/4 full. Bake in a 350 degree oven until slightly brown. About 12-15 min.

I made these in mini muffin tins and just pop one in my mouth every now and then when I want a sweet. They're soooo yummy and easy and don't taste "fake".

Enjoy!

I have oat bran, is that the same thing? or do I need to whiz it through a blender to grind it up a bit more?

I got mine at the grocery store in the healthy food section. I'm sure you could find it in a health food store as well. I'm not sure of the difference between oat bran and oat flour, but you could try it! Maybe blend it a little first like you said? I haven't tried whole wheat flour as a substitute, but I imagine it would be fine.

Hope you like them!
