Default LC emergency non-perishable foods and canned goods

I've decided to go LC, and I am curious to learn what kinds of canned goods are seriously LC, and whether there are any non-perishable goods considered LC.

My emergency stash of food is primarily soups and a large variety of canned & dry beans, along with rices, and gluten-free pastas.

Obviously, I'll have to change my storage strategy -- sure, I've got some tuna fish, and some canned salmon, but not enough to last for weeks, by any means.

I purchased one can of black soybeans, but don't even know what they really taste like, and anyway, I don't intend to be done with Induction for quite some time.

Anybody here have a supply of emergency storage foods?

What did you stock up on?

It seems that virtually everything everyone eats on LC is fresh -- so I'm not getting many ideas by lurking on forums.

Ya know, this is a great thread idea. My boyfriend and I are huge into preparing for when the "S hits the fan", but I hadn't even given any thought to my new way of eating. We have MRE's enough to last us weeks/months, but those won't work for me.
I'll really have to start thinking about what I can stock up on that will fit into Low carb. God forbid the end of the world comes, and I have to eat crap!

You can buy all kinds of meat canned, chicken, beef etc. You can also can your own if you are into that sort of thing.

Oh my, I read Annie's question and the only thing I could think of was beef jerky and tuna. I would really hate for an emergency to happen, I rely on a lot of food that needs refrigeration.

Beef jerky is so very hard to chew. Is it possible to re-hydrate it, do you know?

In the thread about non-perishable foods for the "Work Drawer," one poster mentioned Slim Jims, and I picked up several by different companies.

Was surprised though, to see that the expiration "best by" day was in MAY, 2009 = this year, not even half a year.

One thing that just occurred to me is that MAYBE sprouted seeds would be relatively carb-free.

I don't know, it was just an idea I had.

You can sprout alfalfa seeds and garbanzo beans and untreated sunflower seeds very easily.

But I'm unsure what happens to the carb/protein/fat percentages after the seed is sprouted.

I'll have to check what the USDA tables have to say about Alfalfa Sprouts.

Alfalfa seeds for sprouting should have a LONG shelf life, and I've read that you can even sprout things like Fenugreek seed.

But until I learn exact carb counts, it's all just hypothetical, right?

There's all kinds of canned meats. Low-carb vegetables come in cans or glass jars too - cabbage, spinach, the same ones you'd eat fresh or frozen. Some things come powdered - tomato powder, spinach powder, peanut butter powder, many others. Okay, that assumes a water supply. Depends on whether the world ends with a bang or with a whimper.

If the world ends, I think my neighbors' pets would start disappearing. Followed by my neighbors. That oughtta keep me in ketosis for the forseeable future.

OK, I'm not talking end of the world here. I don't think we're there. However, I've wondered what I'd do if, say, there's an earthquake and food supplies, water, and electricity are cut off for say a week or two.

The best solution I've come up with ... you'll laugh ... is cat kibbles! My cat's on a low-carb cat chow that keeps forever and is relatively cheap. A big bag is about $40. I figure about a cup and a half of kibble a day, plus a multivitamin for me, would keep both of us going indefinitely in an emergency - a little hungry, perhaps, but alive and healthy. No problem with spoilage, no cooking required, crunchy, all-meat goodness ready right out of the bag!

Ummm ... I've been in emergency situations, and to be perfectly honest, the last thing on my mind is whether or not my food is low carb. Simple survival trumps everything else. BTW, as long as you have plenty of fresh water to drink, food is relatively unimportant. A person can survive quite well for several days without food. You might not be all cozy and comfy, but you're one step ahead of the game if you've managed to stay alive. JMO.

Well, I didn't pose this question in terms of TEOTWAWKI.

Years ago, they said we all should have on hand a minimum of three days worth of food & water -- but I've seen mention that the current recommendation is at least two weeks.

When there is a natural disaster, even something like a major Ice Storm, it can take many weeks for a community to bounce back to normal.

I"m not Popeye, and I despise canned spinach, and indeed with the exception of maybe mushrooms and olives, most of the allowable low carb veggies taste pretty disgusting in their non-fresh, non-frozen, CANNED version.

I didn't realize that there was Spinach POWDER, and I'd never heard of Peanut Butter POWDER, but that does remind my that I have heard of dehydrated eggs, so I'm going to explore that.

I just can't imagine dealing with emergency disaster conditions while also screeching to a halt on LC, and suddenly eating HIGH carb canned goods.

But I also can't see eating very many cans of green beans or canned artichokes.

Well, yeah, as a matter of fact, I can fast for several weeks, I've done water fasting in the past.

So sorry I posted this question.

I hadn't even considered restocking my emergency foods supply with LC.

I've been weeks and weeks without power both here in Florida and at my last home in North Carolina due to hurricanes and ice storms, respectively.

MREs were the thing that got us through, now I'm thinking I should stock up on some low carb options for me.
