Default Breaded Steak Fingers

Hi, these are great, just did minor changes to an old dish

Take any type steak , I use chuck but any will work.
Slice steak cross grain in strips 1/2 to 1in. wide

make up a batter to soak your steak strips in for more flavor

Batter I made is
2 eggs
2 tbs cream
1/4 cup water
3/4 cups smashed (powder) pork rinds
seasons I added were, garlic powder, onion salt, lemon pepper, and a dash of season salt.
Blend together and put your steak fingers in to soak.

Breading is only your mashed (powder) pork rinds, season with you seasonings of choice (mine was above seasonings listed above)

Heat a frying pan with any type oil, (make sure your oil is hot)be carefull, it my pop when you put in your first strips in to cook

take your stripes out of the batter and roll in your season pork rinds, and cook in hot oil until brown, turning once to brown other side, and until steak strip is cooked to your liking. Thats it, put on paper towels to drain.

in a hurry, make up an egg, water and milk wash. with seasoning of choce, dip strips, roll in season pork rinds and fry in hot oil.

I like putting smashed alvacadoe on these, and serve with a side dish of choice.

These would have very little carb, amount in them as the batter or wash is only used to hold you breading on so alot stays in the bowl

Hope you like. Lived in Texas most of my life and my mom cooked these all the time (but used FLOUR) sooooo goood

Wow! the crushed pork rind can be used for all kind of "breading" thanks for the tip!

These were really good. I paired them with some fake mashed potatoes, made with cauliflower, I will post the link to the recipe in an edit.

I also made some pretty decent gravy using atkins bake mix and cream/water using some of the leftover oil and "crunchies".
