Default Bored with meat for dinner?

I made this tonight. It smells so good!

Stuffed Peppers and Zucchini

2 large chubby zucchini
2 sweet red bell peppers
250g feta cheese crumbled
1/2 tsp dried oregano
1/2 tsp garlic powder
1 egg

Cut the veggies in half lengthways.
Scoop out the middle of the zucchini and get rid of the stalk and seeds from the peppers.

Mix the cheese, spices and egg together.
Spoon into the vegetables.
Drizzle with olive oil and bake on a medium heat until the veggies are soft. If the peppers blacken around the edges then that's great!

The cheese should be browned also.

You could add in capers, chopped black olives, diced tomato, whatever you like!

Hi Lisa! These look so good, have to make them later today, however, think I'll add some minced lamb. I'm not bored with meat yet, just eggs, but Dr. A said to eat them, so I do. Thanks again for the recipe.

'allo gorgeous! I would add lamb too, I just didn't have any! Something that I will remedy this weekend for SURE, so long as I get my severence pay through.
