Might as well start out the thread with my taco soup recipe for Liz.

2 lbs ground beef
3 cans diced green chilies
3 cans (14.5 oz size) diced tomatoes
1 medium onion
6 oz velveeta (cubed)
3/4 cup heavy cream
6 oz cream cheese (cubed)
42 oz beef broth
1/4 cup taco sauce or salsa
spices: chili powder, ground cumin, garlic powder, ground bay leaf, salt, red pepper (you're going to have to adjust them to your own taste)

In a large soup pot, brown ground beef on medium high heat, then drain grease. Add onions and continue cooking on med high heat for about 5 minutes.

Add diced green chilies, diced tomatoes, beef broth and spices. Bring to a boil, then reduce heat and simmer for at least 30 minutes.

Before serving, add velveeta and cream cheese. Stir frequently, until cheeses are melted, then add cream and taco sauce.

This makes 8-10 servings. Top with sour cream, if desired.

Hey Stacie, sorry you are not feeling well... mate there are far to many cans in your soup, I could feel the E numbers glowing from here ... also canned diced tomatoes have loads of carbs in it (think around 18 each can ) unless you have a LC ones?

Stacie, I think that would make a good chili type soup as well, spices adjusted. I have a chili kit (not the mix with the carbs but the little packets of different spices) I might use that instead and see how it comes out.

I'm sitting around waiting for the latest yoga podcast to download. Then I'm gonna do some yoga, drink some Smooth Move tea (works great, FYI) and maybe put my shoe wheel together!!!! whoooo!!!

That's my taco soup recipe too! It's amazing!

Something's weird...the last three night's I've slept 10 hours(with a few wakings up in the middle of the night from Camryn). What's up with that?!? I've been SOOOOO sleepy. I feel asleep before 8:00 last night!

Hope I'm not busy today, cause I've got lots of random crap to do. Including, starting a dream blog somewhere online...perhaps my myspace, but I won't allow everyone to read it.

Menu:
B...SB PB bar.
L...whatever is catered in or McDonald's double cheesburgers minus bun, side salad.
D...chicken drummies or something else with chicken.

Gotta draw a kiddo...bbiab.

One serving has:
Carbs (total, not net):14.1
Protein: 29.6
Fat: 26.3
Fiber: 1.0
Calories: 410

I used 93% lean ground beef. With the cream cheese and the velveeta, if you use really fatty ground beef, you get an oil slick on the top of the soup.
