Default 1-Minute Cinnamon English Muffin

http://www.sugarfreemom.com/recipes...uffin-nut-free/

I tried this recipe today, and it's really good. It doesn't taste eggy at all, and you can't taste the coconut flour, either. I'm always looking for recipes without almond meal because my son is allergic to nuts. This one really tastes very close to a real English muffin, toasts nicely, and would probably be really good along with some fried eggs.

As far as I can tell, the only thing in it with carbs is the coconut flour, which, divided by two servings, means there's only about 5 total carbs in the entire thing. Delicious.

Looks good! I always wonder about the best way to adjust these recipes since I don't own a microwave.

Thanks for this!
I'm always looking for ways to use my coconut flour.

I just realized there are carbs in cinnamon, so the carb count would be slightly higher...more like 6 per serving.
