Default deli rotisserie chicken

In South beach phase 2 is it OK to eat the rotisserie chicken if the skin isn't eaten? It sure makes easy fixing for salads & other meals.

That'd be ok for phase I or II ....and yes, try to avoid all that skin....

Thanks Judy,
I like the skin but not anymore.. I bought one & it lasted me quite a few days & not one bite of skin.. I wanted to be sure it was OK before buying another one..
I kinda bought the 1st one on impulse

I had to try a few different places before I found one that didn't make them all greasy. They sure are a handy thing to have when you don't feel like cooking and they do make great soup!

I never thought of making broth.. will next time.. do u use the skin too & skim the grease when it gets cold?

I sure ate too much today. We had an Easter brunch in the building today. I was able to eat mostly OP but ate too much. I left all the muffins, sweet roll & that kinda stuff alone. I love biscuits & gravy but none of them for me today. I did eat some sausage, veggie bacon, 1/2 a whole wheat egg salad sandwich & 2 deviled eggs (4 halves) plus a little fruit. I know sausage isn't OP but I feel it is better than the sweet junk they had.

I do throw the skin and bones into making the broth. The chicken that I've found now isn't too fatty, so there wouldn't be much to skim anyways. But by all means, do skim if there is alot. Also into the pot I throw cut up celery and carrots, onion, garlic, 2 bay leaves, about 10 peppercorns and some natural no salt seasoning. I let this all simmer for a couple of hours, then drain.

The one I got last week at WalMart wasn't fatty at all. I have had some that was though.. that's when I really liked the skin. No wonder I have so much to lose now. I have always liked the fat & skin on any meat.
I WILL STAY OP..I believe with the help from ones on these boards I will.
