Hi Robin! That's such a great idea the use the Minnie sweet peppers instead of hotter Jalapeno! I've got to put that on my list. I always see them in a bag with all of the different colors.

I've just been making oven bacon lately and adding 2 pcs into whatever dinner salad I make...I also buy those real bacon pcs they have in the salad section when I am short on time, which is always anymore...

2 (12 ounce) packages ground sausage 2 (8 ounce) packages cream cheese, softened 30 jalapeno chile peppers 1 pound sliced bacon, cut in half Add all ingredients to list

Sausage Stuffed Jalapenos

Preheat oven to 375 degrees F (190 degrees C).
Place ground sausage in a large, deep skillet. Cook over medium high heat until evenly brown.
Drain sausage and place in a medium bowl. Mix with the cream cheese.
Cut jalapenos in half lengthwise. Remove the seeds. Stuff each jalapeno half with equal portions of the sausage and cream cheese mixture. Wrap with half slices of bacon. Secure bacon with toothpicks.
Arrange wrapped jalapenos in a large, shallow baking dish. Bake in the preheated oven 20 minutes, or until the bacon is evenly brown

DH went to go pick up some cream cheese poppers all made at the store but they only had jalapanio stuffed with a combo of sausage, chedder and bacon wraped.
So he bought those and they're really good too....

Funny because they're a lot like yours Robin!
What did you do with all of yours, that's a ton of peppers with 60 halves. Did you freeze some?

Lol, that is a lot, but we had a pot luck and they were a huge hit, there weren't that many left, I did freeze the ones left over, I wonder if they'll be as good?

I was going to eat two then three and now four...I'm stuffed.
I think the carb count is better on these actually because of no cream cheese. If I remember correctly the regular cream cheese are about 3 carbs each. I just checked and these are 2 carbs each.
