Default Pork and Chile Stew

I made this this weekend and it was really good.

Pork and Chile Stew

2 pieces of bonless country ribs (boneless pork shoulder) cut into cubes
1/2 large onion diced
2 cloves garlic minced
1 can rotel brand tomato with chiles
1 can diced green chiles
salt and pepper
water

Brown the pork in a large stock pot. add the onions and garlic and cook until the onions are softened a bit. add the tomatoes and chiles and water to just cover the meat. turn to low and let simmer, covered until done...about an hour or hour and a half. adjust seasonings and enjoy.

I make something similar. It's like a pulled pork with green chile. I start with a pork shoulder roast in the slow cooker overnight, then take off a lot of fat, shred, and add cans of green chile, green chile salsa with tomatillos and onions to taste. Cook that a while, then it's wonderful on LC tortillas or plain. Sometimes with monterey jack cheese all over it. Usually I end up eating most of it for lunches for a solid week (I do well with a routine).

You know, I have been in the southwest for over 35 years now and have just discovered Rotel brand tomatoes with chiles. Probably because they are selling them at Sam's club now and the fact that I am PO'd at Libby's and Delmonte for putting sugar in their tomatoes. I was reading labels and found that Rotel was the only tomato at Sam's that didn't add sugar. I am now in love with Rotel.
