Michelle, thank you for the idea of adding bacon to fauxtatoes. I am getting tired theway I fix them and this will add some extra flavor.

Adelweis, I also loved cabbage sauteed with butter.

JAnn you are welcome! Try it, it's fabulous. I put lots of butter, sour cream on top also after I have warmed up the cauliflower/broccoli faux potatoes. If you don't have cooked fatty bacon on hand, bacon bits work wonderful sprinkled on top. Just make sure to check label on bacon bits so no added sugars. It's my favorite meal actually since this woe. It makes me full and not looking for snacks at all the rest of the day.

Reporting back about the price of cauliflower in my neck of the woods. I live in southern New Mexico and on Wednesday, cauliflower was $3.98 a head at Walmart!

I just cut up in large pieces, boil and use potato masher. Quick and easy.

Frozen isn't nearly that price ($5-7?) and it's what I usually get. My friend picked up the organic and almost fainted at the price! She promptly removed it...so yeah, they aren't going to sell it at that price.

Yesterday at Food Basics (discount Canadian chain) here in Eastern Ontario, cauliflower was $4.99 a head; celery was $2.99; the Dole bagged salads (which I don't care for) were $2.99!!! (omg) Anywho, broccoli was $1.67 a head (well three small heads bundled together), 2 lbs of carrots were $0.88, and cabbage was $0.88/lb. These are all Canadian $$, which is at about $0.60 US per $1 CDN right now if anyone wants to do the math.

So some sale pricing is affordable at least for now. Otherwise, I'm just subbing in frozen where I can.

Cauliflower is on sale for $2.50 a head at the Real Canadian Superstore this week... I wonder if it's a pure loss leader. They were discussing cauliflower prices on two different radio stations that I listen to.
