Default Oven-Fried Parmesan Zucchini

Stacy's Oven-Fried Parmesan Zucchini

Before Pic:



Slice zucchini just right.{not too thin/thick}

In a bowl mix a few tbs. of hellmans mayo with salt{lightly}, pepper, light sprinkle of garlic powder and 1/2 tsp. dill weed. Mix well.

{This is messy but fun!} Lightly spread mayo over each side of zucchini.

In another bowl add a little bit of grated parm from canister.

Hold zucc. over bowl and using your fingers sprinkle parm on both sides.

In a pie plate/baking dish; lightly spray with cooking spray. Lightly coat with ev olive oil as well.

Place zucc in baking dish and add lil chips of unsalted butter on top of ea. one.

Bake at 425* for 14 mins. Once tender they are ready.

OK, this just got me to thinking.....I make an appetizer called "Bacon Bats" that has a small piece of cocktail rye bread as a "vessel' for the topping. Topping is mayo, parm cheese, grated onion ( I use the dehydrated stuff) and crumbled bacon, put under the broiler until brown & bubbly (about 3 minutes). Hmmm, what if the zucchini is cut in rounds as above, then blanched until tender....spread that filling on top, then pop under the broiler........ohhhh, I have to get some zucchini tomorrow!!!

This is a great recipe! It has become one of my new favorite ways to eat vegetables. Although, I think my husband might be tired of me making them every two or three nights for supper.

I tried this recipe tonight and it turned out really good. I sort of coated the zucchini in the seasoned mayo and placed it in a greased pyrex dish then sprinkled on the parm cheese. Baked at 425 for 15 mins then broiled for more browning. yummy
