Antipasta Salad
1.5 cups lettuce, shredded
4 grape tomatoes, quartered
6 small black olives
4 pepperocini peppers
1/4 cup shredded mozza cheese
1/4 cup canned sliced mushrooms
1 green onion, sliced
1 Tbs of your favorite LC Italian dressing
1.25 oz of hard salami or pepperoni, sliced into small strips
Toss everything together making sure everything is coated with the dressing.
Serves 1
