Did you make the head cheese yourself or buy it? I'm curious where you got it!

i bougfht head cheese ~ the walmart deli. i read the package it says 0 carbs on the papckage, i also have bought in ~ Rouses, which is achain grocery store. maybe its more popular here, i had never eatenit before until my uncle said here try this about 2 years ago

IMHO you'd still be ahead of the game using butter over country crock, at least butter is mostly SFAs from an animal, as opposed to PUFAs from vegetables. It is hard to find good lard in a store, but it's easy to just start collecting fat whenever you cook; and ask your butcher for any fat scraps they might have.

Yup. I used to use that stuff exclusively. Makes me want to bang my head against the wall while rolling my eyes. I can't believe they teach us that stuff us food!

Definitely swap over to butter or coconut oil or lard or bacon dripping. Country crock is now mostly soybean oil. shudder.

Gertrude Baines is currently the oldest living person right now at 114 year old...
she enjoys "simple pleasures" of eating a diet of bacon and eggs

so far so good...

Default For Gertrude Baines, reaching 115 isn't old hat

Gertrude Baines, who holds the record as the world's oldest living person, celebrated her 115th birthday Monday, as a crowd of well-wishers that included President Obama and the Dodgers sent their regards.

Plaques, certificates and flowers were presented to the longtime Western Convalescent Hospital resident from high-ranking politicians, including Gov. Arnold Schwarzenegger and Sen. Dianne Feinstein. But it was a cooler packed with one of her all-time favorite treats -- Dodger Dogs -- that got her most excited.

"Ha!" she exclaimed as her beloved caretaker, Cynthia Thompson, told her about the frankfurters.

whats interesting, the longest lived person before her Maria de Jesus dos Santos ... actually avoided meat and only eat fish. For activities, Jesus enjoyed looking through her old family albums, sunbathing at her porch, eating Portuguese rice pudding and ice cream, as well as taking baths. Reportedly, she never smoked nor drank alcohol nor coffee. Jesus liked eating vegetables but avoided eating meat, though she did eat fish.[2]

does diet even matter; a major key here seems to just to not overeat and enjoy life.

We should all look at the Okinawas for optimal health.

They eat very little sugar and about 14oz of meat a day on average 7oz of fish and 7oz of other foods like pork, chicken, etc.

I think with a lot of these super-long lived folks it doesn't matter much what they eat, or even if they smoke or not. The lady that lived to 122 in France smoked will into her 100's.

I love that.

Bucks the trends with long lived people in that he has no surviving friends or family, which is a little sad.
