Default 3 Minute Blueberry & Ricotta Dessert

This recipe is for a very nice single serve portion:

1/3 ricotta cheese
1 small handful blueberries
sweetner of choice (I used splenda, use enough for desired sweetness)
whipped cream (homemade if availible)

Directions:
Add sweetner and ricotta in a small bowl, stir. Drop in blueberries and mash in with a fork. Stir again, making a pretty purplish-color. I like to leave a few berries whole for better texture. Microwave for 30-45 seconds.
Add a big spoonful of whipped cream on top your good to go!

A warm, rich, and wonderfully decadent dessert... ready in less that 3 minutes!

I just ate something just like this, Only I used cottage cheese.

I enjoyed it immensely!

I do this all the time, but with cottage cheese as mentioned above. Yummy!

I don't cook it or mash it tho, just mix the blueberries, cottage cheese and splenda together and eat cold.

I do it with a quarter of an apple and some walnuts, cold. Almost every day, actually. I'll try it with the blueberries later - I have some at home.

Your post reminded me of a very very old WW recipe that my DH and I still love - they called it a mock danish - topping as you described, but put on toast with blueberries stacked high and then broiled until the cottage cheese melted.

I just did this minus the whipped cream, but that should be good. I took frozen strawberries and blueberries and nuked them a few minutes in the microwave and then added a little splenda and vanilla and then put in two dollops of riccota. I have to say, this is a great way to eat Ricotta, since I'm not a huge fan of ricotta. I'll try it the next time with sour cream instead of the ricotta to see how that tastes.

This sounds good to me. I think I'll run to the store to get me some blueberries......lol. I like cottage cheese also but I think the ricotta would give it more of a smoother flavor. What the heck........I'll try both.....lol.

Just tried this, with rasberries instead of blueberries and without the whipped cream, and it was fabulous! I wasn't sure about the warm ricotta, but it was so rich and decadent I felt I was cheating!

I did my own little twist on this:

1/3 cup Ricotta
1 packet of splenda
1 teaspoon of low carb peanut butter
1 teaspoon unsweetened cocoa
1 teaspoon of davinci banana syrup or to taste
combine all and stir well
microwave 30 seconds or so and stir
again
add a nice WHopping squirt of whipped cream
It isn't super sweet, but it is really good. I almost think it would be better cold.

This is pretty much the standard meal or snack on south beach. LF ricotta with a variety of fruits, cinnimon and so on. In stage one of south beach when I tried it I had a blast experimenting with the various methods
