Default Japanese salad dressings and dipping sauces

In my past life, I loved the ginger based salad dressing and mayo and mustard based dipping sauces that they serve at the Japanese cook-at-your-table (hibachi-style?) restaurants.

IIRC, they don't have much of a sweet taste, so presumably few carbs - so I'd like to use them to flavor my low carb meats and veggies.

Any ideas where I can get recipes? (my local Japanese restaurants will not divulge - understandably I guess )

garlic? soy sauce? sesame oil? mayo? ginger? mustard?

Soy-Ginger Dipping Sauce

2 tablespoons vinegar, rice
2 tablespoons soy sauce, low-sodium tamari
1 tablespoon sugar
1 tablespoon sesame oil, toasted
pinch red pepper flakes
1 teaspoon ginger, frozen, peeled and grated
1 medium scallion, light-part only, sliced
We combine all the ingredients in a measuring cup and stir well. We divide between 2 serving ramekins.

Japanese Ginger Dipping Sauce

1/2 cup soy sauce
2 tablespoons rice wine vinegar or white wine vinegar
2 tablespoons sugar (substitute AS)
Hot pepper sauce to taste
1 tablespoon freshly minced gingerroot
2 teaspoons thinly sliced scallion

Combine soy sauce, vinegar, sugar and hot sauce in small bowl; stir
until sugar dissolves. Stir in gingerroot and scallion. Set aside
to allow flavors to develop.

Yield 3/4 cup
