Default substitute pork grinds with what ?

I don't eat pork and have seen that alot of the recipes call for pork grind (even french toast....) anyway, what can i use instead for dishes like crumbed chicken, nuggets, fish etc etc and other dishes that call for bread crumbs.

i have seen that cheese & psyllium husk can be used. Am i missing some others..

Hi Samina (gorgeous name btw!)

I use almond meal for crumbing chicken and schnitzels. Just combine it in a bowl with whatever seasoning you like (herbs, seasoned salt etc). I also put in a handful of breadcrumbs to help it stay together, but you can leave these out if you want to. In another bowl whisk a few eggs together and season those as well if you want. Coat the bits of chicken or fish or whatever you like in the egg, then press in the almond mixture so they're all coated, then fry up in some nice foamy butter and/or olive oil. I also add in parmesan cheese with the almond meal - makes sensational schnitzels! It will get very messy and you will probably go through a bit of it, depending on how much meat you need to coat. As with alot of low carb cooking, you need to play around with it to get the quantities right for your dish. Hope that helps.

Hi there, thanks heaps for the suggestion. I did actually try this about one week ago and it tasted great, couldn't tell the difference at all. Thanks for the compliment tho

Linseed and herbs work well, as does coconut flour and parmesan. I use an egg wash on the meat first then dip in 'crumbs'. Almost forgot, dukkah! it's delicious on lamb cutlets and there are some LC versions out there... just check the label first

Good tip about the Linseed... I'll try it. I have never heard of Dukkah, I'll look into it, thanks.

I have tried to locate coconut flour but haven't had much luck. Did you find it in the supermarkets or online ?

I get my coconut flour from a local health food store. It's good as a mix with almond meal in the pumkpin muffins too

Does the flour actually taste coconutty? could I make my own from dessicated coconut if I threw some in the food processor do you think? Thanks in advance.

Hi Jodi,

I really don't know about that one?? It's a super fine flour almost like a 'powder' of sorts. I guess even if it didn't come out exactly like the store bought flour it could still be great for breading and coating.

Worth a try! Let us know how it turns out.

Coconut flour is not the same as dessicated coconut, but I have used both as "breading". I love the dessicated coconut on shrimp.

Oh yum about the shrimps ! I had seen a recipe for that once but forgot about it..also reminds me of a recipe for shrimps we had in Kuala Lumpur, they were called Dancing Prawns, most devine!! Charged us an arm and a leg for it because it was at a fancy hotel but I was able to get the recipe from the waiter for it, deep fry the prawns, remove and coat thoroughly in mayo, serve with chopped walnuts... thats it!!

MY....MOUTH.....IS....WATERING!!! That sounds sensational, and so damned easy, think of all the things you could roll the little suckers in after they'd been coated in mayo.... Oh, and here's me with only leftover curry mince for dinner.

I use a mixture of parmesan cheese (pregrated stuff), dried herbs, cayenne, salt and pepper.

You do need to cover your baking tray with tin foil though - otherwise cleaning up is a nightmare!
