Sherry - great job on the 8 lbs lost. Okay, I'm Canadian (and of British decent to boot) so I hope you'll forgive my ignorance but ... what are collard greens? Do they taste like spinach or beet greens?

Collards are a dark leafy veggie sort of like turnip greens (without the bitterness).. A "must have" on the southerner's Sunday dinner table, along with a big pan of cornbread (to soak up the "pot likker")... They really are good--must tastier than spinach or turnip greens (IMO). I guess we have a tendency to love the foods that we grew up on. This is one of the very few lc foods that I've loved from my childhood..

Jacquie,
My hubby who is from UK says the only thing that he can think of that collards might be compared to is maybe the taste texture of cabbage or kale. But he had never eaten then until he came to the states. They are a quite unique taste. Hope that helps.

Brit,
My husband (who is :gasp: a Yankee) gags at me eating collards or any greens, any beans or peas except plain green beans or english peas and okra. Can you tell he wasn't raised right? ROFL

Luckily my hubby eats ANYTHING except chocolate cake. He even eats grits without making a face.
