Question Pate - are these ingredients OK?

Hi Karen
Made this home made chicken liver pate -seems fairly LC but thought I would check with you -wont go into the details of making it - it's just a basic pate recipe (cook and blend). Sorry the chicken liver quantity is metric.

350 g chicken livers
3 teaspoons butter
1 large chopped onion
1 clove garlic
1 tablespoon brandy
2 tablespoons sour cream
3 sprigs thyme
salt and pepper

Thanks

Don't worry about the metric...I work in both systems.

Looks fine to me! I would add more softened butter to it in the end because I'm assuming that the butter is used for sauteeing the livers and then you puree it?

I want to point out that chicken livers do contain carbs. I'm not trying to make you carbanoid, but some folks don't realize this and then get into a panic about it.

Oh yum, homemade pate, I have to make some this weekend now

I always cap the top of my pate (I put it in a stoneware pot when it is done) with about 1/2cm of clarified butter, it adds to the visual appeal of the pate and it tastes good too

mmmmm pate

Thanks Karen
- yes the butter is used for sauteeing the onions and garlic.
How do I go about calculating the carbs in something like this?
Haven't looked on Fitday but in other books it just gives the counts for commercially made varieties.

Hi Fiona
Yes it is yum - but take heed of Karen's warning re the hidden carbs. Do you need the rest of the instructions - pretty basic - cook the onions, garlic until soft then add in the livers cook gently for a few minutes (3-5) add in the other ingred. for a minute or two, remove from the heat and cool, put in blender or food processor and blend antil smooth - refrigerate - enjoy

Fitday will have all the ingredients needed to calculate the recipe. What are you serving it on?

Hi Karen
For non LCers I would be serving this with crackers or bread.

BUT.. for me I sometimes slice cucumber and dry it and then spread on. But often (this is a confession) just have teaspoonful all by itself.
Cheers

Thinly sliced discs of daikon (lo bok, japanese radish) make wonderful crisp "crackers" on which to park paté or smoked salmon or other nummy things

Hey! It's not a confession, it's a LC right! It's in the LC constitution.
