Default What are your go-to favorites?

I discovered Muffin in Minute today and that is one incredible dish! Are there any other go-to recipes that I should know about??

haha- this question comes up regularly and my answers all change. i get super into a dish, then move on to another as weather changes, holidays approach, etc.....but many favorites reappear during specific seasons- like salads in spring, or soups in winter.

So current favorites:

entree-
1. ZOODLES- i finally got a sprializer and this makes it so muhc easier. i used to cut them by hand!
i make them lightly suateed in garlic, with shrimp in wine sauce over them, and freshly shaved parmesan

in a creamy cheese sauce made with creamcheese and herbs- with shrimp or chicken

with marinara and chicken meatballs (i don't like beef)

as "lo mein" with spicey orange shrimp

in a pesto sounds good to me, but my boyfriend has severe nut allergy

2. chicken flattened and stuffed with creamcheese and sf apricot jam. topped with sage.
or chicken stuffed with creamcheese and spinach, topped with paprika.

3. any well prepared seafood- crabcakes, scallops, shrimp, swordfish on the grill, mussels or clams in wine sauce, crab legs, etc....

sides:
1. grilled romaine salads! i especially like champagne vinaigerette on these with goat cheese or fresh parm- sometimes i add a hardboiled egg or two to make it a meal.

2. mashed cauliflower

3. roasted brussel sprouts, bell peppers and onions- i really like them after being chilled, and they make a great salad topper, especially with goat cheese and apple cider vinaigrette.

4. cucumber rounds with cream cheese and smoked salmon

dessert:
1. cheese plate and champagne
2. we bought an icecream machine and have been making coconut milk icecream once a week or so. vanilla and raspberry are our two favorite flavors.

Nice list, Robin!

My list (right now) is not that creative, but it works for me:

1) Cheese "chips" with guacamole, tapenade, or artichoke dip (all homemade)

2) Cheese "chips" with taco salad/haystacks ingredients: lettuce, tomato, onion, guacamole, sour cr, hot sauce, olives

3) Caprese Salad with pesto not fresh basil (AK in the winter)

4) Cauliflower "rice" casserole with chilis, sour cr, and cheese

5) Simple snacks: celery and peanut butter, cottage cheese, Quest protein bars, string cheese, Bullet Proof Coffee, Zevia soda with cream, olives,

6) "Sandwich" tomato wraps by GemWraps for any kind of yummy sandwich filling

7) Zoodles with low sugar spaghetti sauce or homemade alfredo, or I'll slice zucchini to use as a base for pizza or lasagna

8) Cheese/almond flour "biscuits"-- good by themselves or with bacon, egg, and cheddar for a breakfast sandwich! Yum.

9) Omelettes

10) Salads with homemade dressing (balsamic vinegar, olive oil, seasoning, dijon, and lemon)

Right Now its Utz Pork Rinds. After indulging and eating 2 18oz barrels in a weekend i finally got my portion control down and now limit to 2 oz portions on the weekend combined with nibbling on 2oz of cheddar cheese.
