Default Egg Squares to Go

I make these once a week for DH's commute:



This is my version of the breakfast casserole or egg muffins that so many low-carbers make. But after making this dozens of times, I wanted to share my version too! And I would love to get feedback from anyone that makes a similar dish for the road and their tips.

It's a simple easy to make dish but a semi-long post so I hope it is ok to just share the link:

As mentioned in the post, this is for an active man that likes a big breakfast so the portions are large, but they are nutritious, filling, and very low in carbs!

This looks fantastic and your photos are stunning for such an "everyday" topic.

You've inspired me to do something similar with muffin tins instead of a whole casserole. I've never thought about using ground pork with spices instead of prepackaged sausages for a meal like this. Thank you for the inspiration!

Great, great recipe and post. I like your practical tips! I too hate cleaning a muffin pan.

One thing I would do to get around the problem of the big pan having overdone edges and and underdone middle - use my handy dandy Baker's Edge Brownie Pan. I also use this for most baked egg dishes. Very yummy especially if there's cream or cream cheese in the recipe - something about the way it browns along the edges.

Wow SeeJay! What a great idea!! I'm not much of a baker, so like Nancy, I have never seen one of those. I think I know what my next kitchen tool purchse is going to be! Thank you for enlightening me!

Ha, I know, I stared at it for months before I bought it. It seemed so frivolous and infomercia-lly. But it's kind of fun and now I love it and also, it's good for really puffy egg dishes like Yorkshire pudding if your plan allows for that kind of baking.
