Default Warm Buttery Egg Salad

This is so stupidly simple it's hardly worth mentioning, but I get so tired of the usual egg dishes that this was a nice change.

I just hard-boiled a few eggs, peeled them while they were still very warm, chopped them up, and tossed them with softened butter and salt. Sort of a warm, buttery egg salad.

When I eat boiled eggs warm, this is how I love them. Eggs and butter are just so perfect together.

Simple. Yet I've never tried it.

I think I will.

A good base for any addition to taste. I would mix some fried chicken livers in it (love them) and a dash of tobasco. Or some shrimp and garlic, maybe.

Oh...thank you for this...I'll give it a try! I've been making a similar egg salad by adding a tablespoon of EVOO per egg. Add herbs, garlic/onion powder, mustard, balsamic, hot sauce, etc., as desired. Very quick and easy...not to mention delicious!

Try this with a really good butter like Kerrygold. It's fantastic!
