Default tweaked micro flax muffin recipe...yummy

I loved the convenience of the micro flax recipe but wasn't thrilled with the taste or the texture so here's my 'tweaked' version:

1 T butter melted
1 large egg beaten
1 1/2 tsp splenda
1 tsp heavy cream
2 T flax meal
2 T vanilla soy protein powder
1 1/2 - 2 tsp cinnamon
1/2 tsp baking powder
1 tsp apple cidar vinager

whisk butter and egg in 3 cup capacity microwave safe mug or bowl (I use a glass measuring cup). Add next 5 ingredients mixing well after each addition. Stir in the vinager and microwave on high for 1 minute. These muffins are light, fluffy, sweet and almost cake-like. I eat them for breakfast every morning. I count these as 7 grams useable carbs each
