Default What's for breakfast?? If you eat it that is :D

So we used to have a breakfast thread on here, so people could toss ideas about what to have to breakfast, and newcomers might get some new ideas. Not sure when it went away, I propose we start again in 2016.

I didn't have "breakfast" food today, rather tuna salad with mayo, and a square of Coconut Chia bars I made at home. And some black coffee.

What did you have today for breakfast?

I am boring. I eat scrambled eggs with bacon or a sausage patty every day.

Spicy sausage bowl, sometimes with onions, lettuce, and cheese. Sometimes adding an egg or two. Actually that can be my lunch and dinner too! Quick to cook up when I need to get to work in the a.m. and I'm hungry if I skipped dinner the night before.

I had my morning coffee, then a handful of cashews before I ran out the door. I usually have some broth and aim for a decent fast, but I was running behind and I was pretty hungry.

I'm in on this thread! Thanks. I hope I don't turn any stomachs with the wacky stuff I have sometimes. I don't think of it so much as Breakfast (which it technically is I guess) as Meal One.

Early morning stirfry with chicken thigh,coconut oil,peppers,onion,bok choy,basil, iceberg,shriataki, daikon- the boiled egg I ate with some kimchi whilst cooking. Good way to break fast.

Lately I have been eating for breakfast a venison burger cooked in coconut oil with a salad of romaine lettuce and homemade vinaigrette. Then I grind up 2 tablespoons of flax seed with a bit of salt and mix it with the fat remaining in the pan in which the venison was cooked. It's almost like having a bit of cereal but without the carbs but fiber and omega 3's galore. Strange breakfast for some, I guess, but I enjoy it.

Thanks Jean. I've heard about flax seeds and now have seen some in the stores. I'll get some now that you have planted a "seed" ha! I have extra fats around to add if needed for the mixture. Wow, great idea!

That was pretty much me for he first 18 months. Sometimes I'd add some veggies & cheese to make a omelet, but more often than not breakfast was just 2 eggs with bacon, ham, or pork sausage. Boring? Maybe. Easy? Yes. Tasty - always. I never did get tired of it.

But to add fiber and a few more carbs to my breakfast, I've switched to having a daily flax mug muffin instead of just eggs. Each day is different... blueberry, apple, banana, chocolate, pumpkin, spice, PB, etc. Most are under 10 net carbs and my typical muffin contains about 15g of fiber. I still have a small serving of breakfast meat with breakfast. That didn't change.

Now that I've been at it for a few months, I'd say I like the flax muffin breakfast just as well as my former staple of eggs & meat. Preparing eggs is a easier, but the options for tweaking up different flavors of flax muffins keep things more interesting. Both meals keep me full and not thinking about food until lunch -- and that is what is most important to me.

how do you make the coconut chia bars- sounds good!

Thud- that looks awesome!!!!

Khrussva- i love making flax muffins or bread, too.
my favorite are pumpkin spice with cinnamon creamcheese (i just beat cinnamon, vanilla and splenda into creamcheese) or sj jam and butter.

I'm not a breakfast person, but i am following this thread because i often make breakfast for lunch or dinner

Great ideas everyone! This morning I had two eggs fried in bacon fat, and four skin-on chicken thighs, and two black coffees.

Robin - the coconut chia bars, I hacked from this recipe at Wellness Mama: http://wellnessmama.com/7942/chocol...ut-energy-bars/

I changed the recipe a bit for me, chiefly:
*I omitted the honey (used some brown sugar twin, and a packet of stevia instead),
*dropped the coconut oil to 1/4 cup (CO shreds my insides if I eat too much, I was scared of it LOL)
*didn't have cocoa butter, so used 1/4 cup of BACON FAT YES I DID!!
*used 1/2 cup of natural almond butter to replace the other 1/2 cup of fat

They are soooo good. Melt in your mouth with crunch in them. I really love the texture but it might not be for everyone. And no, you cannot taste the bacon fat. It tastes a little smoky, but that's about it. I've ordered some food-grade cocoa butter and hoping to make these with that when it arrives Maybe could use butter as well instead of the bacon fat if you are eating dairy.

It made like 24 very rich square bar things, not sure of nutrition, but someone could very likely plug it in.

Leftover chicken (roasted, thighs, etc.) for breakfast is SO good, something about cold chicken and black coffee, great combination.

You all are making me think that I need to try making the flax muffins now. Oddly, I never was a breakfast person or a morning person before going LC.
