Default How to beat eggwhites ??????

There's a serious prob - i can't beat egg whites and get them to rise !!

All my life, i've never succeeded in making egg whites into "soft peaks". SO i can't make anything that requires that !!

Now i badly want to try out Karen's cheesecake recipes.
And it requires the egg white beating part ..

How ????????

I usually use electric beaters. is it coz the beater is nt fast enough ??

I also made sure my utensils are free from fat, etc. but it just doesnt work.

In addition to having the bowl and beater scrupulously clean - you can rub them the salt and lemon - have the egg whites at room temperature and beat on maximum speed. Also make sure that no egg yolks have gotten into the whites.

Like Karen said - room temp helps wonders but I used to have the exact problem you're having and I finally solved it by getting a mix-master. Not just hand held beaters, but a mix master with the whip attachment - that thing will beat those babies into a beautiful soft peak in no time - and save your arms, too! Lol...I'm not kidding, until I bought one of those, I never got a nice egg white beat - did that make sense?? Lol...

You don't have to get some big fancy model - a simple one will do but if all else fails, that's an answer!

Egg whites will NEVER beat in a plastic bowl. You must use either glass or metal (or ceramic)

Maybe this is your problem?

stupid question...... can you use egg sub. for this or does it have to be fresh egg whites.

Try freezing a metal bowl and your beaters and it seems to work well for me. This was an old trick of my Mom's.

You may be confusing beating egg whites with beating cream.

As Karen said in her earlier post, it's best for egg whites (and the bowl and beaters) to be at room temperature.
