Are you cooking this "pudding"? or is it like the instant stuff you get in a box?
If its like the instant you might try Thicken/Thin (a number of online sites sell it) or xanthan gum (a major ingredient in the thicken thin). Just a warning that you will use MUCH less of these kinds of thickeners - they are gum and fiber based and a little goes a long way. Also, xanthan alone has a "slick" sort of texture (some might say "slimy") so you may not be able to use it the same way as cornstarch, or other starch based thickeners.
you could make a cooked or baked pudding, like a custard, with eggs and he protein powder, and maybe some sort of milk or milk substitute but I'm not sure what that would do to the nutritional properties of the protein powder you are using.
