I have been using my meter religiously these past few days. I am using the "test, test, test" method from phlaunt.com. She says to test 1 and 2 hours after each meal in the beginning until you see how you respond to foods. I seem to peak at the 2 hr mark. Is that normal? Should it be going down by the 2 hr mark?
My breakfast this morning contained very few carbs. My readings were:
103 at 1 hour
107 at 2 hrs.
My lunch contained carbs (cucumbers, chips). My readings were:
113 at 1 hour
134 at 2 hrs
That was about a 25g carb meal. I also had 4 oz meat/cheese roll-ups.
What are your thoughts? (I know the chips aren't low-carb approved. I wanted to test them out of pure curiosity.)
If you ate pure sugar, your BG peak would probably be at the 30-60 minute mark, but the chips, especially eaten with fat & protein (meat & cheese) would have a delayed response, explaining the higher reading at the 2-hr mark.
If you had kept recording at 3, 4, etc. hours, you would see how long the chips kept your BG at too-high levels.
As diedra wrote, depends on the food (carbs, how much fiber too) and what you ate it with. Fat, protein and fiber can slow down the peak.
You can find lists of "fast" and "slow" carbs, based on the glycemic index. Rolled oats is slow vs white bread is fast on those lists, but oatmeal just raised my BG and kept it up for much longer, and I assume, insulin at higher levels for longer too. Goal is to get back to baseline and "slow carbs" just delay that.

Mine seems to peak at about 2 1/2 hours -- maybe I have a slow metabolism but I changed to this timeframe after I noticed it was a little higher at this time.
