How to turn brownies into cake???
I wanted to make a low-carb birthday cake, so I tried a recipe on lowcarbluxury.com that uses keto brownie mix and keto bread mix. The end result was absolutely hideous, and I threw it away.
As plan B, I whipped up some Atkins brownie mix instead. The atkins mix uses Hi-Maize and maltitol, and although a bit higher in carbs, it was pure brownie heaven, and great for a birthday treat. (I swear it tastes just like duncan hines or betty crocker!)
My question is this: In the future, how can I prepare this brownie mix so that it comes out more like chocolate CAKE? The atkins mix calls for 2 eggs, 1/2 cup oil, and 1/4 cup water. Any ideas on how to tweak this into cake? More or less eggs? oil? water? does it baking powder or some other leavening?? How can I fluff it up?
