Default Newbie from New Zealand :)

Hi to one and all,

Nice to meet you all here. Umm where do I start.... I'm a stay at home mum with 3 small boys (11, 7, 6 aarrgghh!!) and one hubby Recently moved back to beautiful New Zealand after eight LONG years in Australia.

I have recently started the Atkins diet (17 June 2007 to be exact) and to my amazement I have already lost 5kg!!! (11lbs) yahoo!!! yippee!!! And it hasn't even been that hard, I'm quite shocked really, at how I can eat so much meat, butter, eggs, etc and the weight is just pouring off.

Well I'll enjoy it now while it lasts, I'm sure I'll hit a plateau soon, and when that does happen I better start doing some exercise and drink water (which I have started doing either yet)

So, very nice to meet you all, and I hope to catch up with you all on here soon.

Welcome, Jane. Well done on the 5 kilos! That's a great start - I hope it continues just as well for you.

Well done on the weight loss. And lucky you living in such a beautiful place! My best friend emigrated from Ireland to NZ 3 years ago and she has such a wonderful life there now. At the moment i believe she is counting penguins on the south island! Very envious, one place me and my husband would gladly move to!

Thanks heaps everyone, for the warm welcome. I've been checking out all the before-after photos, lc recipes, wow so inspiring and mouthwatering sad thing is, a lot of the ingredients they use, we just don't have over here, oh well, just another challenge I suppose.

I did make a meatloaf, and a crustless salmon quiche tonight, both turned out surprisingly, really tasty

Even my hubby and kiddies enjoyed it, little did they know it had onions, mushrooms, celery and capsicum

If anyone's got some lc recipes using NZ ingredients that would be great.
