Default Yummy fettucini shirataki

So, our local whole foods store had shiratki fettucini noodles on sale for $1 per bag. (One bag is two servings; each serving has one net carb.) So, I just had to try them out. My meal last night was awesome.

First, open the noodles into a colander. Let sit under cool running water for several minutes to clear the smell. Then let sit for several more minutes while doing your prep work. Airing them out releases the odor.

Here's what you need:

2-3 tbs Butter (I used French Pamplie butter)
1/4 cup or more Heavy whipping cream
3 tbs shredded Parmesan cheese (I used a sample I picked up at whole foods). Use mroe cheese if you like it cheesy
One can of lump crab meat (I used cheap old bumblebee)
one clove of garlic
A couple of hands full of frozen spinach
One large nonstick skillet
Salt and pepper to taste (I used Hawaiian red sea salt)

In the skillet, bring a bunch of water to a simmer. Simmer the noodles for about 90 second or so. Then drain them back into the colander. Do NOT overcook or they go chewy and nasty. Just cook long enough to clear the flavor.

Dice your garlic. Melt about two tablesppons of butter in same pan. Add garlic and let it begin to cook. Add the spinach in, still frozen. Sautee it around, while it defrosts. Add generous amounts of shredded parmesan to the pan, and then pour in about 1/4 cup of heavy cream. (Add more if needed). Let the parmesan mix with the cream and let it bubble for a couple of minutes to thicken. Then, drain the crab completely and stir it in.

Taste, and season with salt and pepper. The last step is to add in the noodles. They will already be cooked, so you don't need to heat them long. Just add them long enough ahead of serving that they are piping hot. This makes two very generous servings.

Garnish with some minced parsely if you want.

The whole meal took me 10 minutes to prepare. I ate half and saved the other half for today's dinner. I'll post again after I try it and let youknow how it tastes after sitting for a day. I have no idea what sitting all night in the fridge will do to the noodles.

One of the best things about this meal is the clean up. One knife. One cutting board. One colander. One pan. One bowl. One pair of chopsticks (I cook with chopsticks). One fork.

I don't trach carbs super carefully. But one serving of noodles has one carb. The spinach is not much. 1/2 a clove of garlic is negligible. The cheese has maybe 1 more carb. And I use a heavy cream where all of the calories come from fat, so it really is zero carbs. (high in calories, high in fat, but for one serving, it is 1/8 cup of cream, which is not bad at all)

You could use chicken, shrimp or fish instead of the crab. But I was looking for something fast, and I had a can of crab in the cupboard.

OMG that sounds so goooD

We dont have the noodle things here but that sauce sounds AWesome. I never could come up with something good for the crab meat. Definit going to try

This is basically my recipe for creamed spinache with crab an noodles added in.

It was really good as left overs. The noodles held up just fine overnight in the fridge.

This looks awesome!

I have been looking for something else to do with my shirataki fettuccine noodles. I can find these only at Albertsons here in my neck of the woods. They are pretty common these days in the Asian stores if you do not live to far from one, it is worth the trip. Can't wait to try this!
