Default Help! Cooking geniuses - carrot cake replacement

I've found just about everything I could imagine on here, and some I thought never possible in low carb land (like that molten center chocolate cake thing - thanks Elle), pumpkin bakes I stole from someone else, etc etc.

My husband would KILL for carrot cake. I've looked through the Da Vinci syrups, and apparently he's the only one.

What kind of brilliant combo, old recipe, new recipe would have the taste of the carrot cake? and what about that buttercream frosting? (the buttercream frosting sounds way easier than the carrot cake replacement)

(he did ask if I'd read anywhere here someone advocating just eating only the thing you crave all day for a couple days to eat the craving - "like umm, carrot cake for example" he said. )

I'd love to help him.

Wow, KevinPa is a genius cook! It's tough to look at his recipe index - cause it's all pictures - and they all make me hungry

For those (like me) who can never find an individual's journal - and feel really slow - here's the link to the carrot cake recipe - PLUS the post has the recipe index (now indices) posted at the bottom.

I have seen a buttercream frosting recipe in a Dana Carpenter book. It was actually a creamcheese one.
