Default Bacon Cheese Burger Pizza Casserole



Stacy's Bacon Cheese Burger Pizza Casserole
Chop 9 roma tomatoes-chunky
Chop half a med. yellow onion
Cook 6-7 slices of bacon/crumble {I use sf/ls bacon.}
*The cauliflower mixture will act like a pizza crust.*

In a saucepan--med-hi heat; add all of tomatoes and 2 tbs. onions.
Drizzle in ev olive oil. {enough to coat bottom of pan}
Sprinkle in a nice amount of garlic powder.
Salt/pepper to your taste.
2 tsp. dried basil
1 tsp. dried oregano. Stir. Once it comes to a boil turn heat to low.
Cover and simmer while your working on everything else.

Place 2- 16. oz pkg. of cauliflower in a micro-safe bowl and add a little bit of water. Cook for 12 minutes.
Drain WELL.. Add back to bowl and chop pcs to a smaller size.
{I use a sharp knife}
Sprinkle in: garlic powder, salt, pepper, and 1/4 C. parmesan cheese.
Combine well.
Add crumbled-cooked bacon.
Sprinkle in some more parmesan to coat. Stir.
Cover w/foil--Set aside.

Pre-Heat Oven 400*
Mash tomatoes -Stir tomato sauce and remove from heat. {set aside}

Brown 2 lbs ground beef with a drizzle of ev olive oil, pepper, garlic powder, 1/2 tsp. oregano, rest of onion, light sprinkle of basil, and parsley. Drain; Return to skillet.
Pour in all of tomato sauce and stir well. Bring to a simmer; stir; reduce heat; cover and lightly simmer for 5 mins.
Lightly spray a large baking dish with cooking spray.
Add half of the cauliflower mixture
Add half of the beef mixture
On top of that lightly sprinkle parmesan
Sprinkle w/shredded mozzarella cheese and cheddar cheese.
Repeat layers...
Bake for 10-15 minutes.
Serve.

This sounds pretty good. Do you have any idea how many servings it makes? 6? 8?

I just cook for myself, so I have to reduce recipes to avoid having too much. An extra serving or two is fine, but I wouldn't want more than that. I can do the reduction with no problem -- been doing it for years. But it helps to have an idea of how much the original recipe makes. Even if you could just tell me the size (either volume or measurements) of the pan you baked it in, it would be sufficient information for me to know where to start.
