Default Tricks, Tips and Discovered Treats!

Hi Everyone,

I thought it would be interesting to have a thread focused on making the LC way of life more exciting! When I first did LC, all I ate was scrambled eggs, spinach and meatloaf, now I love to endulge and find new ingredients, ideas, tricks and tips for this WOE. So lets share!

My latest discovery -- CHOCOLATE WHIPPED CREAM- at night, i just squirt a couple of tablespoons in my mouth before bed and i'm good to go! Tastes like chocolate ice cream.

Shirataki Noodles- havent actually had them yet (i ordered them online) but they are a definite possibility!- ZERO calories, carbs or fat, might be a great pair with shrimp alfredo sauce (can definitely get all the fat and cals i need from that!) or OMG Spaghetti Carbonara - Love it Love it Love it Love it.....

Egg Yolk mashed with mayo, salt and pepper- got the idea from the fat fast- its actually pretty good although i gagged at the idea at first. Use as a dip for cheese crisps. I just dont know what to do with all the whites...

Did you know that all buffolo sauce consists of is butter and hot sauce??? I certainly didnt!!! Buffalo chicken wings with creamy Blue cheese dressing is the way to go!!!

What about you guys?

I REALIZE THAT YOU'RE ON ATKINS, BUT IT'S POSTED ON "GENERAL" BOARD:

I am hooked on nuts. It depends on your diet, but they certainly do work for me. Almonds, hazelnuts, pistashios.... delish! I also found hazelnut flour (like almond flour, it's ground up nuts).

I saw this online and went nuts - sandwich pepperoni baked for about 20 minutes or so and let cool off. They're like salty chips. My husband and I fight over them.

I always put SF syrup and heavy cream in my coffee and it tastes like a naughty treat. Especially when everyone was going nutso for the cinnamon dulce lattes, coffee+heavycream+SFsyrup=

Dreamfields. If you can do it, try it! I ate a HUGE piece of lasagne (using Don Pepito sauce which is the lowest carb sauce I found) last night and still managed to get down another 1/2 pound.

I dont think you have to be on Atkins to be Carb Conscious. I wanted to open this topic to all those who have found ways to enjoy their food more- hence General.

What do you use the flour in? Is it sweet or can you use it to thicken up soups and gravies or maybe even coat fried chicken or in meatloaf?
The pepporoni chips sound like a GREAT idea. i think I'll try that this weekend!

I know it, but some atkins people are very aggressive about saying something is or isn't on their particular diet. I just put the caveat in first so I didn't get a backlash. Most people are wonderful on this board, but sometimes...

I used the hazelnut flour in Elle's molten cakes (her recipe is in Sweet Treats, I think). DELISH! I've also used it in thickening broth. I believe you can use it as you would regular or whole wheat flour. I have never had a kitchen catastrophe (yet!). Note that the hazelnut flower smells like hazelnuts so you'll find what you use it with will have a hint of nuts.

Do try the pepperoni. Some people try it with cheese, but I haven't had much success. I will try again soon because pepperoni chips and cheese chips sounds like a good combo!!

Yeah, there are people like that everywhere (which i have to come realize in the last couple of months- first real job out of college) I say- pick and choose the tips you want to try!

I'm going to buy that flour, I bet it would be great in peanut butter chicken!
i microwave my cheese crisps, it works very well. make little piles of shredded cheese (i like cheddar) on a plate (some use parchment paper) and microwave on high for about a minute. Retrieve plate and immediate move the crisps to a napkin (or else they stick to the plate). I make a lot at one time and store them in the refrigerator.

Here is another idea I got from Rachel Rays cooking show.

Use large Portabello Mushroom Caps as hamburger buns!!!

I think this will be our Friday Night Special! BF will get real buns of course, he could eat a loaf of bread, a pound of butter and slab of prime rib everyday and still be thin as a toothpick- :/.

That recipe is the absolute best treat I have had that is "on Plan". Perfect, little chocolate treat, rich and satisfying! (I used carbquik) but I did consider almond flour......oh and it is in Sweet treats section. If you haven't tried it, you should!!!!

I've used it for a number of things... and really, any finely ground nut flour. I use pecan meal with butter and a little protein powder to make a crust for cheesecake... hazelnut meal in a crust for a quiche.... almond meal in cookies....... I've dipped sticks of zuchini in oil and then rolled them in a mixture of nut flour and seasonings then roasted... yuuuummmm!!!

Thanks for the tip!! Will definitely try.

Those of us LCers looking into the nut flours, just don't get sticker shock! They're $10-12 a pound. You only use a little here and there, so it does last a long time and is well worth the investment

I make a yummy cheesecake tart. I use butter and almond flour for the "crust." Then take cream cheese and an equal amount of no salt added butter and some chocolate powder (my fav is the Hershey's dark) and some sweetener like liquid splenda/liquid sweet n low/stevia and then put it on top of the crust and munch away. If I am feeling like a baked dessert, I will reduce the butter amount add a couple of eggs and bake.

Dreamfields pasta with homemade sauce.

Chocolate mousse.

Mixed berry smoothie/shake.

Homemade ceasar with lots of anchovies.

Shirataki noodles served in Udon soup.

I haven't tried Shirataki noodles yet, but I love Dreamfield's, spaghetti squash, and thinly sliced celery cooked like pasta. mmmmm.....

For pepperoni chips instead of baking them, you can microwave them on a paper towel for a minute and a half. Let them cool off! They are excellent to take to the movies in a baggie while everyone is munching popcorn.

i'm with the other poster on the berry smoothy, i make a strawberry smoothie everyday, or a banana smoothie with my sf banana syrup. i've made a lime cheesecake with a ground pecans, butter, and splenda for the crust. i haven't tried any of the almond flours this time around but last time i did atkins i would fry chicken and things in soy flour, low carb as well.
