Default Cooking chilli

Hey all...I'm going to make a chicken chilli tonight using the rest of my red beans (canned) from last night. Anybody have a (non-copyrighted) recipe? I'm mainly interested, I guess, in knowing how long to cook the chilli! I figure I'll throw in chicken, the beans, tomato sauce (I'm out of paste) and, of course...chilli. Am I missing anything?

Demi gave you the link to our recipes. When I make chili, it s big job as I do include many veggies and do things separately before going into the big pot.

I brown the meat first, sautee the peppers and carmelize the onions and sautee the garlic too. I also add cumin, crushed red pepper and oregano.

To make it thicker, I add in sliced fresh mushrooms and a big zucchini sliced into 1/2 moons. I let it all cook for several hours to let the flavors meld well. This is on a very low heat.

I made a big pot just the other day...I have to say that each pot is better than the last.

I'm proud to say that I think that I've become a good cook!!

How I missed the menus thread, I'll never know. Especially since it was on a sticky. Instead like a dork, I went through about 7 pages and then posted here.

I did find the one chicken chili recipe. I'm going to do that one instead of the ground beef one since we don't have any lower-fat ground beef in the house...just the cheap stuff that was on sale forever ago in my freezer. It's bubbling away now. Thanks again!

I was planning on making chili tomorrow and I'm definitely using your suggestions! I just went shopping and stocked up on both zucchini and mushrooms. Great idea to put them in the chili. Thanks!
