Default Chocolate?

Another question. At the grocery store, I saw chocolate that was 80% cacao and only 2 grams carb per square. It does contain sugar, but with such a low carb count, can I eat it? (I am not in the Induction Phase now.) Thanks for any advice -- don't want to add sugar, but a good chocolate fix would be nice!

Best I know, not on induction. However, Barb gave me a wonderful choco. fix recipe! Melt 4 Tbsp. coconut oil and stir in 2-3 tsp. splenda and roughly 2 Tbsp. cocoa powder. First line pan in wax paper and put in freezer to chill. Pull pan out and pour mixture in then put back in freezer to set. It's really yummy!!!

does the coconut oil add a coconut flavor? I'm not a fan of coconut.... could you use a different oil?

I believe I read in one of the many coconut oil threads on this site that the only coconut oil that tastes like coconut is the "virgin" coconut oil. Just look for "expeller pressed," or a similar phrase on the lable. The coconut oil I have says "organic" and "expeller pressed" on the lable, and it has no flavor whatsoever. It's completely bland.

I happen to love the taste of coconut, so I plan to look around for some virgin coconut oil, just because I think it would be yummy in things such as hot cocoa! I'll continue to use the oil that I already have for frying foods, etc.

I just discovered the Hershey's special Dark cocoa. It is a great carb bargain at 1g per TBL. I just made some chocolate whipped cream and was able to use twice the amout of cocoa I usually use. It was DIVINE! It's fine after induction.

If you are treating cocoa powder as a spice and only using small amounts like up to a tablespoonsworth in a day it would be 'induction-legal'.
But remember to account for the carbs in the cocoa powder and the sweetener!

I read on some posts that virgin coconut has No flavor and on others that it HAS flavor. I've not tired it yet myself so I cannot say. What I have is a jar from Wal-Mart that is Lou-Ana brand and it has a coconut flavor but not real strong. I like coconut so I really like it. Now if I use it to fry in I don't notice any flavor. I too would like to know just how the virgin tastes but if it does not have the flavor then I'd rather not buy it myself.

Just be prepared for the way the whipped cream will look. It doesn't look like the regular cocoa (a nice "chocolate" brown). With the special dark, it will look like...well, MUD! But the taste will be so much better!
