Default Substitute for Carb Solutions vanilla shake mix?

I found a recipe for LC sugar cookies, and it calls for Carb Solutions vanilla shake mix. I am not able to find this anywhere. Is there something I could substitute for this?

Here is the recipe, if this helps:

1 cup butter, softened
2 1/4 cup Carb Solutions vanilla shake mix
1/2 cup Splenda granular, divided
1/2 tsp vanilla extract
1 large egg

Preheat oven to 375deg

Place 1/4 c Splenda in bowl - set aside

In a med bowl, cream the shake mix, remaining 1/4c Splenda, and vanilla extract thoroughly. Then add egg and stir until well mixed.

Shape into 1" balls and place on sprayed nonstick cookie sheet about 2" apart.

Flatten with bottom of glass, sprayed then dipped in Splenda. Redip for each cookie.

Bake 8-10 mins.

Cool on rack.

This says that the yield is 40 cookies at 0.7 carbs each. However, I calculated 42g for the Carb Solutions mix, 12g for the Splenda, and 0.6g for the egg. To make it easy I divided as 3 dozen (36) which would be 1.5g each.

I would like to try this, but am not able to find Carb Solutions vanilla shake mix. I saw some whey protein mix and EAS soy vanilla mix, but neither of these said they were shake mixes, just they were drink mixes so I didn't get them. What would be a substitute for Carb Solutions vanilla shake mix? Thanks.

I'd try the recipe with either of those, just to see if it works.

I'm pretty sure the whey protein mix would work just fine in the recipe. It has long been used to make shakes. In addition, back in the "olden" days ( ), before all the newer low-carb flour substitutes were on the market, it was a very common ingredient in low-carb baked goods. The soy protein works equally well (I've used both), but some people prefer to avoid soy products. Which you decide to use is simply a matter of your personal preference. HTH!

Edited to add: Whey protein mix comes in a variety of flavors, chocolate and strawberry, in addition to vanilla!

OK Great! I thought that I could probably use that, but wasn't sure since it said 'drink mix' and not 'shake mix'. I thought that there may be a difference in consistency that wouldn't work right. I will probably get the soy since it is a smaller jar and cheaper, and I want to make sure it works before I buy a big huge jar of something

Thanks! I'll have to try this now when I am able to get back to the store. I'm in the middle of the ice storm that just passed through North Texas so pretty much stuck at the house right now. (I just went out earlier when it was clear - it's supposed to get bad again tonight or Wed).
