Default Holiday Entertaining...What to serve!!??

Hazy and I were chatting about this and I figured it would be helpful if we all put our ideas together for better planning.

Having family and friends over to visit during the holidays is always fun...but we can set ourselves up for failure if we don't plan it in advance.

What will you put out for your guests (and you!! )to nibble on during the holidays?

Onion Dip (try to make it with the FF Fage yogurt)with cut up veggies
cheese plate
hummus with snap peas
asst nuts( careful!!)



OK....what are your ideas?

I just got home from a long day and have nothing to contribute tonight, but I am really looking forward to seeing this thread grow. I just bought the South Beach Holiday cookbook because I am facing this same situation. I just had time to browse through it quickly, but it looked like there were some wonderful ideas. In the past I have made a veggie tray that I nibbled on and regular party fare for all others. I recently decided that this is a lifestyle that I really believe in and I am no longer going to serve guests or family food that I don't see as healthy.
Will be giving this some thought and coming back later to contribute.

For Thanksgiving we made Cranberry sauce too. Took a can of peaches in pear juice, cooked the Cranberries in the juice from the can with added water and some splenda. After the berries cooked down, I turned off the heat and added the sliced peaches. It was heavenly. (served cold of course). We even mixed it with FF yogurt and a dash of cinnamon with some sliced almonds as a dessert.

I'm going to TRY SB pumpkin pie without the crust. Basically canned pumpkin, with pumpkin pie spice, cinnamon, FF evaporated milk, etc. Then I'll bake it without the crust. At T-day most people left the crust over anyway.

Hey, iceman, I make that often. I usually cook it in custard cups and give everyone individual servings that way. Somehow that seems to negate the verbal effects of the missing crust.

How about shrimp with a sugar free cocktail sauce
Mini quiche with a whole grain crust.

What kinds of dips? I like onion and or clam dip. The FF Fage yogurt would make a great base!!

If you put out chocolate, try to find dark 70% or(85%) more cocoa!! It is actually healthy for you in small amounts!!

Hot Mulled Apple Cider

Everyone loves a warm cup of cider (known to many as wassail) during the holidays. This recipe gets a boost of flavor from oranges. Since they are left whole and aren't eaten, this recipe is fine for every Phase of the South Beach DietŪ.


Hot Mulled Apple Cider (Wassail)

Phase 1

Serves 4

Ingredients
1 quart (4 cups) water
Sugar-free apple cider drink mix
4 cinnamon sticks
1 whole nutmeg
2 tablespoons lemon juice
1 teaspoon grated lemon peel
2 oranges
2 teaspoons cloves, whole

Instructions
Following the directions on the package, combine the appropriate amount of sugar-free apple cider drink mix with 4 cups of water in a large, heavy saucepan. Add the cinnamon, nutmeg, lemon juice, and lemon peel. Keep the oranges whole and leave the peel on. Press 1 teaspoon's worth of cloves into each orange and add them to the pot. Bring to a simmer over high heat; simmer 10 minutes. Remove from heat; let steep 5 minutes. Using a slotted spoon, lift out oranges and discard.

2 calories

1 g carbs
0 g fat
0 g sat fat
5 mg sodium
0 mg cholesterol
0 g fiber
