Default Colorado Salmon Fans...

As a transplant to Colorado from Vancouver BC Canada, I have to admit I've been having trouble finding good fish and seafood products in my local grocery stores.

Fish, in particular - it's all frozen and with "colour added".

Somehow, "Red Lobster" just doesn't cut it.

Yesterday, I took a chance on yet another frozen salmon product at my local King Soopers store. It was "Market Bay Wild Sockeye Salmon with a Cedar Plank Board", at a price of $19.99 It was frozen, and I wasn't thrilled with that, but what do you expect in Colorado?

Yes, it seemed extravagant, but I bought it anyway, rationalizing that when I get in the mood for a decent steak, I'll often spend more than that.

I defrosted the salmon overnight in the fridge and my husband and I BBQ'd the cedar-plank salmon tonight.

It was *to die for*

Quite simply, I think it was the very best meal I've ever had since moving to Colorado from Vancouver BC Canada. I remember flipping over the package in the store to read the ingredients.

Ingredients: salmon (fish)

No "colour added" and no weird preservatives.

Furthermore, it was so incredibly good, I felt as if I'd died and gone back to Vancouver again.

If you're thinking $20 seems outrageous, the portion will easily serve four people, and compared to decent steaks, this meal was truly outstanding.

We steamed some asparagus and drizzled those with a wee bit of melted butter, fresh garlic, sea salt and freshly ground black pepper. I sauteed some mushrooms in marsala wine, and sliced up some English cucumber (BC Hot House no less..in the same King Soopers grocery store) and topped the cucumber with vinegar, salt & pepper (like I used to do with my french fries back in the day when I actually ate french fries).

We added some freshly chopped dillweed to the salmon while it was BBQ'ing on the cedar plank.

Um - if you like salmon, and live in Colorado - run, don't walk to your nearest King Soopers store and pick up some of this "Market Bay Wild Sockeye Salmon with Cedar Plank Board". Really simple to make, and I swear - the very best grocery-store bought salmon I've ever had, including while I was in Vancouver.

I'll be in CO soon and I'll have to check it out.
Frozen fish is always hit or miss - great or freezer burned.
Wild salmon is the way to go.
