Default Make ahead Recipes

that can be frozen is what I am looking for.
June 12th I will undergo Surgery and I want to make sure DH can make me something that is SBD approved without having to actually really having to prepare it. My point, I want to make the Dinners and Lunches ahead of time so all he has to do is either warm up or take very little time to prepare. He and kids both don't mind eating SBD meals, they just munch on other stuff during the day anyway, or add their Starches as they feel like.

I was looking for a few soup recipes, some stews maybe, or some casserole kind of dishes. He don't mind cooking the meat in a pan or on the grill, but basically something to go with the meat. Side dishes, one pot dinners stuff like that. Things that YOU have tried yourself and would recommend. I have the South Beach Diet Cookbook that I grabbed from the Library, but they all sound good and I don't have the time to really try them out to see if they are good.

Not sure what you like but I do a lot with chix. I've frozen the leftovers and reheated in the microwave.

Chix breast chopped and pan fried (I use 2 breast for 2 of us)
after chix is cooked add the following in amounts that you like in a cassarole dish (I don't eat green peppers but would be good too)

onion chopped
garlic minced
2 c broccoli chopped (or frozen)
3T lite cream cheese
Mix together with chix
top with 1/4c grated cheese (cheddar or what you like)
heat until hot thru oven or mircowave

I also do another one with tomatoes (canned), and parmesan

Hope all goes well with your surgery and get back on your feet fast.

I do some great crock pot stuff.
Here are a few examples of what I have cooked recently: All serve a good 4 portions (if not 6)

Sweet & Sour Chicken

6 - 8 chichen breasts - boned and skinned and cut into halves
4 'round' pieces of canned pineapple, or chunks - in natural juice with nothing else added
2 red peppers chopped into large chunks
(optional) a few thin slices of chorrizzo - I didn't eat these but they were nice for flavour)
3 garlic cloves
1/2 cup pineapple juice

It's really simple to throw it all into the pot and cook on slow for 8 hours! It really was very nice indeed!! You don't have to add in any other liquid other than the juice....it looks real dry, but it comes out really saucy

Simple Roast Beef in a crock

A joint of lean beef (or large beef steaks)
6 - 8 large carrots cut into big pieces
2 onions halved
a herb of your choice (I used rosemary right out of the garden)
3 cloves garlic
Salt and pepper

Simple!! Cook on slow for 8 hours, and it comes out absolutely beautifully!! Very very tasty!! Better in fact the next day, so it would be really good for re-heating.

Chicken Soup

6 chicken breasts boned and skinned chopped into large chunks
6 carrots
1 onion
1 head of broccoli
2 leeks
(optional) a routabaga cut into small chunks
2 cloves garlic

bung it all in the crock, cook again for either 5 hours on high, or about 8 hours low.



Hope that helps, I can recommend al of the above especially the sweet and sour (you could do the sweet and sour with pork too).

I'm wishing you well during your surgery and recuperation Susan!!

As for ideas to pre-prepare....don't forget about our turkey chili!! If you don't have the recipe, I'll find it for you.

Also, I precook chicken or turkey breast cutlets, 2 lbs at a time. I keep them in a tupperware in the fridge for easy salads and quick snacks. I make my own marinade using different sauces and spices.
