Default Rhubarb = not finding it

I am assuming it is fine to have it since it is low in carbs, only 2.8 in a half cup and 1.1 fiber.

I always thought it was a fruit but discovered it is a veggie.

I normally bake with it. But today I just boiled it in two cups of water then added SF jello and two cups of cold water.

I am just counting the carbs.

I used to make squares and I am going to look at the recipe since I think it will convert real easy to low carb since it is mostly just eggs, sugar and rubarb. I am sure I can make the crust out of nuts.

Fruit has seeds.My mom used to make rhubarb pie, which tastes like apple pie. You could probably use almond flour for the crust. You can make a "mock" applesauce with rhubarb. We used to grow it when I was a kid. Did you know that the leaves are poisonous.

My mother used to make a rhubarb/strawberry pie. That could be made low carb.

I grew up eating rhubarb, it grew in everyone's back yard in Onawa, Iowa. My question is, my grandma used to make a sorta rhubarb custard? It was kinda creamy. Does anyone have any idea of what this could be had how to make it? (of course, splenda always replaces sugar....). Neither my grandma or mom are around anymore to ask, and I've been missing this. TIA

hmmm, rhubarb sause. cut up a couple of stalks, add sweetener to taste, a little water depending how soupy you like it, cooked over low heat until the rhubard is soft. which really doesn't take long considering how stringy it is. chill. add a little heavy cream. yum! my favorite summer dessert.
