Smile The Yummiest Pumpkin CAKE!!

This turned out so delicious that I had to share. Keep in mind that I am NOT a cook, so there may be a way of improving it even more. I just started dumping ingredients together and everyone loved the recipe, even my 4 children who definitely don't need to diet! We have 6 in our family, so this makes a very large quantity (Almost 2 full baking sheets worth)

Ingredients:
2 1/2 cups of milled flax seed
3/4 cup of Hudson's soy flour
1 cup water
1/2 cup of heavy whipping cream
1/2 tsp of baking soda
1 1/2 tsp of baking powder
5 eggs (I just kept dumping them in since they had less carbs, but it turns out great!)
1 cup splenda granuales
2 Tablespoons of Divinci Caramel Syrup
3 Tablespoons of REAL vanilla syrup (not imitation)
2 -3 Tablespoons of cinnamon
3 Tablespoons of real butter
1/3 cup of pumpkin mix swirled in at the very end


Basically, dump it all together except for the pumpkin mix and mix all around. I then put the mix into baking sheets and swirled the scoop of pumpkin onto the top of the mix. I baked it for 20 - 25 minutes at 350 degrees. (Check the time though, b/c I didn't really keep track) You may want to spray on a little bit of that non stick spray as well to keep it from sticking.

The entire two pans together have less then 60 carbs and you could easily cut it into 20 - 30 pieces.... so 1 serving has approx. 2 - 3 carbs!

If celebrating a birthday, you could also choose to put a low carb cream cheese icing on top and it would be even more delicious!

I also made the exact same recipe and left out the pumpkin (where the maj. of your carbs are coming from) and it's still good to eat.... probably suited for sandwiches and such. Approx. carbs of this: 1 1/2 - 2 carbs per square

Just a sidenote, I tried making this with the pumpkin mixed in and it's nowhere near as good. I don't know why, but the pumpkin seems best added at the end. Also, if you have a big sweet tooth, you may want to add a little extra splenda in or just add a little of that whipped cream stuff in a can to top it off.
