Default Smoked Tofu Kebabs with Spicy Peanut sauce

I made this last night and was well impressed with the results.. It was inspired by a recipe in Rose Elliot's Low-Carb vegetarian cookbook, although I've spiced it up.

It's a great (vegetarian) starter or main course and the peanut sauce is a great hummus replacement or dip

You need:

1 block smoked tofu
1 tbs smooth (or crunchy) peanut butter (unsweetened)
approx 2 tbs water (you may need more)
1 tbs grated ginger
1 crushed garlic clove
squeeze of lemon juice
1 tsp soy sauce
half a chopped chilli
tbs chopped coriander/cilantro
2 tbs olive oil

Chop tofu into 16 equal squares and thread onto 2 metal skewers
Mix half the ginger with the olive oil and brush one side of the tofu.
Place under a hot grill and grill for about 20 mins, turning a quarter and brushing until all sides are crispy.

Mix remaining ingredients until you have a smooth sauce - add more water as needed to thin down.

Take tofu of the skewers and serve with the sauce - delicious.

You can play about with the sauce or add soy to the marinade for the tofu, but this is really delicious and makes a change to meat
