Default Chocolate Cheesecake Cupcakes

Chocolate Cheesecake Cupcakes
4 oz cream cheese, softened
1 cup splenda (divided use)
2 eggs (divided use)
2 tsp vanilla extract (divided use)
4 tablespoons unsalted butter, melted (oil is ok, too)
1 teaspoon vinegar
2/3 cup half and half (heavy cream is ok, too)
1 cup carbquik baking mix
1/4 cup cocoa powder (or a little more if you like)
1/2 teaspoon baking soda
1/2 cup LC chocolate chips

Preheat oven to 325 degrees. Place papers in 12 cupcake tins.
Combine cream cheese, 1/3 cup splenda, 1 egg and 1 teaspoon vanilla extract and mix well. Set aside. Combine 2/3 cup splenda, 1 egg, 1 teaspoon vanilla, melted butter, vinegar and half & half. Add carbquik, cocoa and baking soda and mix well. Divide batter evenly between 12 tins. Top with cream cheese mixture (and chocolate chips). Bake for 20-25 mins.

each cupcake contains: 154 cal/ 13g fat/ 5g protein/ 5g fiber/ 4 net carbs(9)

These look really good....i'll have to try em out.
Did they come out okay? I know sometimes that baking mix lends to a funny aftertaste.

I thought these came out well - be sure to use unsalted butterm though - otherwise they're too salty.
Also - if you don't have LC chocolate chips, they still taste pretty good!
