Default Tofu Cheese Scramble

I love tofu! And if you do too... try this, its wonderful! A nice change of pace from eggs.

1 pkg extra firm or firm tofu (mine has 4 total carbs for the whole thing)
1 Tbs butter
Shredded cheese of your choice
salt & pepper

Just cut the tofu into small bite size pieces, melt the butter in a non stick pan over medium heat and stirfry until golden. Season with salt and pepper. Then top generously with your favorite shredded cheese and get on the heat until the cheese gets gooey.

I know this may sounds weird, but its seriously so delicious and filling.
Definetly enough for 2 people.
