Default fresh veggies vs frozen veggies

I am new to atkins and also new to this board, I have a question.

With winter upon us fresh vegetables are going to go up in price. I am on a vary strict budget for food. Are the frozen veggies low in carbs and just as nutritious?

The same frozen vegetable has the same carbs as the fresh. From what I have read, frozen veggies may be more nutritious that fresh. The frozen ones are frozen as soon as they are picked, while the fresh ones spend time in shipping and in the store before being bought.

In general, many frozen vegetables are just as nutritious as fresh. In some cases even more so because they are usually frozen soon after picking rather than sitting on a store shelf and in transit for who knows how long.

I agree with Dodger. Because produce tends to lose vitamins and nutrients the longer it is between picking and eating, frozen are often higher in nutrients than the fresh produce in stores because they are usually frozen very soon after harvesting (within a day or two). Frozen are probably the next best thing to growing and picking your own and cooking them the same day (which is great, BTW, but not everyone has the time and space for a garden) and I rely quite a bit on frozen veggies when they are out of season here.

Hmmm I heard upon freezing a vegetable can lose up to 94% of its nutrients. It's the only thing really stopping me from doing that once-a-month cooking thing.

... I'll have to see if I can find some research on it again. It's been a couple years since reading that.

Stay away from frozen veggies in cream sauces, or butter sauces, or whatnot. Just get the frozen veggies that say on the carton, "no sauce added."

I love frozen veggies for adding to fritatta's, and soups. I don't need to blanch them, or peel them, or cut off the over ripe flowerettes.
