Default Veggie Lasagna (Holy Crap!)

I am sorry but this is just about the best thing I ever tasted! I just made it and it is so yummers. It's a little higher in carbs cause it has alot of veggies, but I dont really count my veggies. Good way to get in your servings though, and leaves you really stuffed! K anyway on to the recipe.

2 Low Carb tortillas (burrito size)
1 Yellow Squash
1 Zucchini
1 bunch green onions
2 garlic cloves
salt & pepper to taste
1 can spinach drained (or a bag)
2 slices/oz cheddar cheese
2 slices/oz mozzarella cheese
1 cup Alfredo sauce (I used classico)

You can add whatever else you want, mushrooms or tomatoes or whatever.
Preheat oven to 350. Chop up yellow squash, zucchini, green onions, garlic into chunks and put in a bowl and toss. Add 3/4 of spinach and toss. Put bowl aside. In another smaller bowl mix alfredo sauce and remaining spinach, stir together. Get out a square cassarole dish. Place tortillas inside and cut of edges to make them square so they fit at the bottom. Take them out and put a small layer of the sauce into the bottom of the casserole dish. then place 1 tortilla on top of the layer of sauce. Set aside. Put all veggies into a pan and saute for a few minutes, until they seem cooked through. Then on top of the tortilla put half of the veggie mixture. Then place 1 slice of cheddar and one slice of mozzarella (cut or folded into pieces) on top. Then place remaining tortilla, the remainder of the veggies and the other pieces of cheese and last the rest of the sauce. Bake at 350 for 20-30 min or until cheese looks bubbly and yummy! Let stand for 5 min before cutting.

Serves 4 generously.

Per serving:

CALS 211
FAT 11
CARBS 11
PROTEIN 12

Did I mention this was really good? Ha ha. If you want to reduce the carbs you can use only one squash, but like I said I load up on the veggies without counting. Enjoy! Feel free to experiment!

Oh i forgot to tell you to season it with your fav seasonings, salt pepper, italian is what I used.

Too add a little more veggie power and lower carbs even more you might look at the recipies that use zucchini sliced the long way for the lasagne noodles.

Default i second that opinion!!

alright- i'll rave about this one! i tried it- think i forgot the spices, but added a tomato cut up, mushrooms, and red and yellow peppers AND i'm sure that i added more cheese- i just threw shredded cheese on the layers. i did not have alfredo sauce, so i made it up from jeni's recipe- cream, parm, pepper and........ butter? can get it for you if you need it, or it is in my journal.

my only warning is that, if you are close to the top in your casserole dish, put a cookie sheet under it! maybe it was when the cheese melted, but i suddenly heard food frying on the bottom of the over i used a 13 x 9 but it clearly wasn't big enough!

mmmmmmmmmmmmmm it was WONDERFUL!! and filling! i guess i'm seconding EVERYthing she said! (i feel like a commercial!)

i have no idea what the carb count is, because i also stopped counting carbs (from veggies) and started counting veggie servings- this was a great help in me getting me 3-4 a day! WOW was it good!!!

Whenever I eat this I am full for hours and hours. I think it's all the fiber! Glad you liked it!
